- 4 cups (400g) green cabbage, shredded
- 1 can (400g) chickpeas, rinsed and drained
- 1 medium (150g) cucumber, diced
- 1 cup (150g) cherry tomatoes, halved
- 1/2 cup (70g) kalamata olives, pitted and halved
- 1/3 cup (50g) feta cheese, crumbled
- 3 tbsp (45ml) olive oil
- 2 tbsp (30ml) lemon juice
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine the shredded cabbage, rinsed chickpeas, diced cucumber, halved cherry tomatoes, and halved kalamata olives.
- In a small jar or bowl, whisk together the olive oil, fresh lemon juice, dried oregano, sea salt, and black pepper until well combined.
- Pour the dressing over the salad ingredients and toss thoroughly until everything is evenly coated.
- Gently fold in the crumbled feta cheese.
- Allow the salad to sit for 10 minutes before serving to slightly soften the cabbage and allow the flavors to meld.
