A vibrant stir fry featuring tender chicken and colorful veggies infused with zesty lemon and Mediterranean flavors.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 3 tbsp extra virgin olive oil (divided for cooking)
- Salt and black pepper (to taste)
- 2 medium zucchini (sliced into half-moons)
- 2 red bell peppers (diced into chunks)
- 1 large red onion (sliced into strips)
- 2 cups cherry tomatoes (halved)
- 1 cup Kalamata olives (pitted and halved)
- 4 cloves garlic (minced)
- 1/4 cup sun-dried tomatoes (chopped)
- 2 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 1 lemon (juice only)
- 0.5 cup feta cheese (crumbled)
- 2 tbsp fresh parsley (optional garnish)
Instructions
- Prep all fresh vegetables and chicken by chopping them into bite-sized pieces.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the chicken, season with salt and black pepper, and sear until golden brown, about 5-7 minutes.
- Transfer the chicken to a plate. In the same skillet, add the remaining olive oil, then add red onion and garlic. Sauté until the onion is translucent, about 2-3 minutes.
- Add zucchini, red bell peppers, and sun-dried tomatoes. Sauté for about 4-5 minutes until slightly tender but still crisp.
- Combine the cooked chicken with the veggies, sprinkle in oregano, basil, and thyme, and toss well.
- Drizzle with fresh lemon juice, fold in Kalamata olives and feta cheese, and toss to combine.
