Description

A vibrant stir fry featuring tender chicken and colorful veggies infused with zesty lemon and Mediterranean flavors.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil (divided for cooking)
  • Salt and black pepper (to taste)
  • 2 medium zucchini (sliced into half-moons)
  • 2 red bell peppers (diced into chunks)
  • 1 large red onion (sliced into strips)
  • 2 cups cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and halved)
  • 4 cloves garlic (minced)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1 lemon (juice only)
  • 0.5 cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (optional garnish)

Instructions

  1. Prep all fresh vegetables and chicken by chopping them into bite-sized pieces.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the chicken, season with salt and black pepper, and sear until golden brown, about 5-7 minutes.
  3. Transfer the chicken to a plate. In the same skillet, add the remaining olive oil, then add red onion and garlic. Sauté until the onion is translucent, about 2-3 minutes.
  4. Add zucchini, red bell peppers, and sun-dried tomatoes. Sauté for about 4-5 minutes until slightly tender but still crisp.
  5. Combine the cooked chicken with the veggies, sprinkle in oregano, basil, and thyme, and toss well.
  6. Drizzle with fresh lemon juice, fold in Kalamata olives and feta cheese, and toss to combine.
