  • 2 tbsp Olive oil (Extra virgin recommended)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

  • 2 cups Rice (Regular or cauliflower rice)
  • 1 count Avocado (Creamy and healthy)
  • 1 count Mango (Fresh preferred)
  • 1/4 count Red onion (Diced)
  • 1/4 cup Cilantro (Chopped)
  • 1 count Lime (Juiced)
  • 1 count Jalapeño (Adjust for heat)
  • 1/2 cup Mayonnaise (Can substitute with vegan option)
  • 1 tbsp Sriracha (Adjust based on heat preference)
  • 1/2 tsp Chili flakes (Optional)

Instructions

  1. Preheat your grill over medium-high heat. Coat shrimp with olive oil, garlic powder, onion powder, salt, and pepper. Grill for 2-3 minutes on each side until pink.
  2. In a bowl, combine diced mango, red onion, cilantro, lime juice, and jalapeño. Season with salt and pepper, mix well, and let sit for at least 10 minutes.
  3. Whisk together mayonnaise, Sriracha, lime juice, garlic powder, onion powder, salt, and pepper until smooth and creamy.
  4. Layer cooked rice at the base of each bowl, top with grilled shrimp and avocado slices. Spoon mango salsa over and drizzle with lime-chili sauce. Garnish with cilantro and lime wedges.
