- 1 count Avocado (Creamy and healthy)
- 1 count Mango (Fresh preferred)
- 1/4 count Red onion (Diced)
- 1/4 cup Cilantro (Chopped)
- 1 count Lime (Juiced)
- 1 count Jalapeño (Adjust for heat)
- 1/2 cup Mayonnaise (Can substitute with vegan option)
- 1 tbsp Sriracha (Adjust based on heat preference)
- 1/2 tsp Chili flakes (Optional)
Instructions
- Preheat your grill over medium-high heat. Coat shrimp with olive oil, garlic powder, onion powder, salt, and pepper. Grill for 2-3 minutes on each side until pink.
- In a bowl, combine diced mango, red onion, cilantro, lime juice, and jalapeño. Season with salt and pepper, mix well, and let sit for at least 10 minutes.
- Whisk together mayonnaise, Sriracha, lime juice, garlic powder, onion powder, salt, and pepper until smooth and creamy.
- Layer cooked rice at the base of each bowl, top with grilled shrimp and avocado slices. Spoon mango salsa over and drizzle with lime-chili sauce. Garnish with cilantro and lime wedges.
