Ingredients

  • 1 tablespoon olive oil
  • 2 cups finely chopped mushrooms (such as cremini or button)
  • 2 garlic cloves, minced
  • ½ teaspoon thyme or Italian seasoning
  • Salt and pepper to taste
  • ¾ cup shredded cheese (Gruyère, mozzarella, or sharp cheddar work well)
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, warm the olive oil. Add the mushrooms and cook until they release moisture and become golden brown, about 6 to 8 minutes. Stir in garlic, thyme, salt, and pepper, and cook for another minute. Let the mixture cool slightly.
  3. On a lightly floured surface, unfold the puff pastry sheet and roll it gently to even out the surface. Spread the cooled mushroom mixture evenly across the pastry, leaving a small border around the edges. Sprinkle cheese evenly over the top.
  4. Carefully roll the pastry into a tight log, starting from one long side. Press the edge to seal. Slice the log into about ½-inch rounds and place them flat on the prepared baking sheet.
  5. Brush the tops lightly with the beaten egg. Bake for 15 to 18 minutes or until puffed and golden brown.
  6. Let cool slightly before serving warm or at room temperature.
