Ingredients

  • 450g / 1 lb lean ground beef
  • 185g / 1 cup long-grain white rice, uncooked
  • 425g / 1 (15 oz) can black beans, rinsed
  • 280g / 1 (10 oz) can diced tomatoes with green chilies
  • 480ml / 2 cups beef broth
  • 110g / 1 cup shredded cheddar cheese
  • 1 tbsp taco seasoning
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium heat; drain fat.
  2. Stir in the rice, black beans, tomatoes with chilies, beef broth, and taco seasoning.
  3. Bring to a boil, then reduce heat to low and cover.
  4. Simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Sprinkle with cheese, cover for 1 minute to melt, and garnish with cilantro.
