- 450g / 1 lb lean ground beef
- 185g / 1 cup long-grain white rice, uncooked
- 425g / 1 (15 oz) can black beans, rinsed
- 280g / 1 (10 oz) can diced tomatoes with green chilies
- 480ml / 2 cups beef broth
- 110g / 1 cup shredded cheddar cheese
- 1 tbsp taco seasoning
- Fresh cilantro for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat; drain fat.
- Stir in the rice, black beans, tomatoes with chilies, beef broth, and taco seasoning.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Sprinkle with cheese, cover for 1 minute to melt, and garnish with cilantro.
