Creamy Philly Cheese Steak Soup Recipe for Cozy Nights

- 1 pound beef sirloin (can substitute with ribeye or flank steak)
- 1 tablespoon olive oil (for cooking)
- 1 medium onion (chopped)
- 1 medium green bell pepper (diced)
- 3 cloves garlic (minced)
- 4 cups beef broth (homemade or vegetable broth can be used)
- 1 cup heavy cream (or half-and-half)
- 1.5 cups provolone cheese (shredded)

Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add 1 pound of sliced beef sirloin and cook for 5-7 minutes until browned.
- In the same pot, add another tablespoon of olive oil if necessary. Add 1 chopped onion and 1 diced green bell pepper, sauté for 4-5 minutes.
- Add 3 minced garlic cloves and cook for 1 more minute until fragrant.
- Return the browned beef to the pot, pour in 4 cups of beef broth, and bring to a simmer. Cook for 15 minutes.
- Reduce heat to low, stir in 1 cup of heavy cream and 1 ½ cups of shredded provolone cheese until melted.
- Season with salt and pepper to taste, serve hot, and garnish with chopped parsley.
