Description

- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- ½ cup granulated sugar
- ¼ cup brown sugar
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 can (8 oz) crushed pineapple, undrained
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and set aside.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, beat the eggs with the granulated sugar, brown sugar, oil, and vanilla extract until well combined.
- Stir the crushed pineapple with its juice into the wet ingredients. Mix until evenly incorporated.
- Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix. Fold in the nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
