- Green onions (for garnish)

Instructions
- Heat vegetable oil in a pan over medium heat.
- Add diced chicken breasts and cook until browned (5-7 minutes).
- Stir in minced garlic and ginger, cooking for another minute.
- Add rice, pineapple chunks, soy sauce, salt, and pepper.
- Pour in enough water to cook the rice and bring to a boil.
- Reduce heat, cover, and simmer until rice is cooked and chicken is tender.
- Garnish with chopped green onions and serve.
