- Beat in the egg and vanilla extract until well combined.
- Gently fold in the chopped pistachios.
- Spread the pistachio filling evenly over the cookie base.
- Crumble the remaining cookie dough over the pistachio filling.
- Bake for 25-30 minutes, or until the edges are golden brown and the filling is set.
- Let cool completely in the pan before cutting into bars.
