Instructions

  1. Preheat and cube: Fire up your oven to 400°F. Chop 2 medium sweet potatoes into ½-inch pieces so they roast evenly throughout.
  2. Season potatoes: Toss your potato cubes with 2 tablespoons olive oil, ½ teaspoon salt, and ¼ teaspoon pepper until everything’s coated good.
  3. Roast vegetables: Spread them out on your sheet pan in one single layer. Roast for 25-30 minutes, and stir them halfway through so they caramelize beautifully.
