  • 1 leaf bay
  • 6 cups low-sodium chicken broth or stock

  • 2 cups uncooked pasta
  • 23 cups rotisserie chicken, shredded

Instructions

  1. In a large Dutch oven, heat the olive oil over medium-high heat. Sauté the carrots, onions, celery, and garlic for about 5 minutes until softened.
  2. Stir in the dried thyme, dried parsley, and bay leaf.
  3. Pour in the chicken broth and water, bringing it to a boil. Reduce heat and let simmer for 15 minutes.
  4. Add the uncooked pasta and shredded chicken, continuing to cook for about 10 minutes or until the pasta is tender.
  5. Adjust seasoning with salt and pepper to taste before serving.
