Ingredients

  • 1/2 cup Salted Butter
  • 3/4 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 2 Eggs (at room temperature)
  • 1 cup Greek Yogurt (at room temperature)
  • 3 ripe Bananas (mashed, about 1 1/2 cups)
  • 1 tsp Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 4 oz Cream Cheese (at room temperature)
  • 3 tbsp Butter (at room temperature)
  • 2 cups Powdered Sugar
  • 3 tbsp Coconut Oil (melted)
  • 1/4 cup Almond Butter (smooth and creamy)
  • 1/4 cup + 3 tbsp Maple Syrup
  • Pinch of Salt

Instructions

  1. Preheat the oven to 350°F and grease an 8×8” square baking pan lined with parchment paper.
  2. Brown the salted butter in a saucepan over medium-high heat for 5-8 minutes, then set aside.
  3. In a medium bowl, combine flour, baking soda, salt, and cinnamon. Set aside.
  4. In a large bowl, whisk together the brown butter and sugars.
  5. Add eggs, Greek yogurt, mashed bananas, and vanilla extract and mix well.
  6. Fold in the dry ingredients gently until just combined.
  7. Pour the batter into the prepared pan and bake for 45-55 minutes until golden and a toothpick comes out clean.
  8. Let the cake cool completely before frosting.
  9. Beat cream cheese and butter together, then add vanilla extract and powdered sugar until smooth.
  10. Make the salted caramel by mixing coconut oil, almond butter, maple syrup, and a pinch of salt until smooth.
  11. Spread the frosting over the cooled cake, then drizzle and swirl the caramel on top. Finish with flaky sea salt.
  12. Cut into 16 slices and enjoy!

Notes

  • Store leftovers in an airtight container.
  • For a richer flavor, use dark brown sugar.
