Ingredients

  • 1 pound Boneless Skinless Chicken Breast
  • 2 tablespoons Olive Oil (Avocado oil is a great substitute.)
  • 2 tablespoons Fajita Seasoning (Consider making a homemade mix.)
  • 1 large Red Bell Pepper
  • 1 large Green Bell Pepper
  • 1 large Yellow Onion (Red onion can be a spicier alternative.)
  • 1 Lime (Use fresh lime juice for the best flavor.)

Instructions

  1. Preheat your oven to broil on low or set it to 450°F.
  2. Slice the boneless skinless chicken breasts into strips, about 1/4 to 1/2 inch thick.
  3. Julienne the red and green bell peppers, and halve the onion.
  4. Combine the sliced chicken, peppers, and onion on the sheet pan. Drizzle with olive oil and sprinkle fajita seasoning. Toss to coat.
  5. Bake for 15 to 20 minutes until chicken is cooked and vegetables are tender.
  6. Remove from the oven and squeeze fresh lime juice over the fajitas before serving.
