This easy shrimp dirty rice is a spicy, savory Southern-style dish that brings together juicy shrimp, perfectly seasoned rice, and bold Cajun spices in one hearty skillet.

- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt and pepper to taste
- 1 cup long grain white rice
- 2 cups chicken broth
- 2 tablespoons chopped fresh parsley
- Optional: a few dashes of hot sauce for extra heat
Instructions
- Season the shrimp with 1 teaspoon of Cajun seasoning, a pinch of salt, and pepper. Set aside.
- In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and celery. Sauté until vegetables are soft, about 5 minutes. Stir in garlic and cook for another minute.
- Add the rice to the pan and toast it slightly, stirring often. Sprinkle in the remaining Cajun seasoning, paprika, and thyme. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 to 18 minutes, or until rice is tender and liquid is absorbed.
- Once the rice is nearly done, heat a separate skillet over medium-high heat with a touch of oil. Sauté the shrimp for 2 to 3 minutes per side or until pink and cooked through. Remove from heat.
- Fluff the rice with a fork, then gently stir in the cooked shrimp and fresh parsley. Add a few dashes of hot sauce if desired for added spice.
- Serve hot and enjoy immediately.
