  • 1/4 cup white balsamic vinegar or white wine vinegar
  • 2 Tablespoons fresh basil, minced, packed
  • 1 Tablespoon red onion, minced
  • 12 cloves garlic, minced
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large salad bowl, combine the fresh baby spinach, crumbled goat cheese, drained sun dried tomatoes, and pine nuts.
  2. In a small jar, combine all the basil vinaigrette ingredients: extra virgin olive oil, white balsamic vinegar or white wine vinegar, minced fresh basil, minced red onion, minced garlic, dijon mustard, salt, and pepper.
  3. Shake the jar vigorously until the vinaigrette ingredients are well blended.
  4. Drizzle the basil vinaigrette over the spinach salad to taste.
  5. Toss gently to combine.
