Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Layer the bottom with thinly sliced russet potatoes and drizzle olive oil over them.
- Spread the browned and crumbled lean ground beef over the potatoes.
- Add a layer of sliced onions evenly over the beef.
- Top with sliced fresh tomatoes or canned diced tomatoes.
- Sprinkle a layer of chopped green bell peppers on top.
- Season each layer with kosher salt and freshly ground black pepper.
- Cover the casserole tightly with aluminum foil and bake for about 2 hours.
