Spicy Penne Arrabbiata is a bold and fiery Italian pasta dish with a simple tomato-based sauce infused with garlic and crushed red pepper flakes.

- 12 oz penne pasta
- 2 tablespoons olive oil
- 4 garlic cloves, thinly sliced
- 1 teaspoon crushed red pepper flakes
- 1 can (15 oz) crushed tomatoes
- Salt to taste
- Freshly ground black pepper
- 1 teaspoon sugar (optional, to balance acidity)
- Fresh parsley or basil, chopped (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the penne according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until just golden and fragrant.
- Stir in the crushed red pepper flakes and cook for 30 seconds.
- Pour in the crushed tomatoes and stir well. Season with salt and black pepper to taste. If the tomatoes are too acidic, add a small amount of sugar.
- Simmer the sauce for 10 to 15 minutes, stirring occasionally, until it thickens slightly.
- Add the cooked penne to the skillet and toss to coat evenly. If the sauce is too thick, add a splash of reserved pasta water.
- Serve hot, garnished with fresh herbs or Parmesan if desired.
