Description

Spicy Penne Arrabbiata is a bold and fiery Italian pasta dish with a simple tomato-based sauce infused with garlic and crushed red pepper flakes.


Ingredients

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 4 garlic cloves, thinly sliced
  • 1 teaspoon crushed red pepper flakes
  • 1 can (15 oz) crushed tomatoes
  • Salt to taste
  • Freshly ground black pepper
  • 1 teaspoon sugar (optional, to balance acidity)
  • Fresh parsley or basil, chopped (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until just golden and fragrant.
  3. Stir in the crushed red pepper flakes and cook for 30 seconds.
  4. Pour in the crushed tomatoes and stir well. Season with salt and black pepper to taste. If the tomatoes are too acidic, add a small amount of sugar.
  5. Simmer the sauce for 10 to 15 minutes, stirring occasionally, until it thickens slightly.
  6. Add the cooked penne to the skillet and toss to coat evenly. If the sauce is too thick, add a splash of reserved pasta water.
  7. Serve hot, garnished with fresh herbs or Parmesan if desired.
