This Easy Swiss Mushroom Melt is a hearty and flavorful sandwich featuring golden sautéed mushrooms, melty Swiss cheese, and your choice of protein, all grilled between buttered bread. It’s a comforting diner-style meal perfect for any occasion.

- 1 tablespoon butter
- 8 ounces mushrooms, sliced (baby bella or cremini preferred)
- 1 small onion, thinly sliced (optional)
- Salt and pepper to taste
- 4 slices Swiss cheese
- 2 burger patties or 6 to 8 ounces thinly sliced roast beef or turkey
- 4 slices sturdy sandwich bread or 2 sandwich buns
- Butter or mayo for toasting
Instructions
- In a skillet over medium heat, melt the butter. Add the mushrooms and onions (if using). Cook until mushrooms are browned and tender, and onions are caramelized, about 8-10 minutes. Season with salt and pepper.
- If using burger patties, cook them in a separate skillet to your desired doneness. If using deli meat, warm it in the mushroom pan during the last few minutes of cooking.
- Lightly butter or mayo the outsides of the bread slices or buns.
- Assemble the sandwich: Layer Swiss cheese, the mushroom and onion mixture, and your chosen meat between the bread slices. Add another slice of Swiss cheese on top.
- Place the assembled sandwich in a skillet over medium heat. Press gently with a spatula.
- Cook for 3-4 minutes per side, until the bread is golden brown and the cheese is fully melted.
- Remove from skillet, let rest for a minute, then slice and serve.

- Baby bella or cremini mushrooms offer more flavor than white mushrooms.
- A splash of Worcestershire sauce or balsamic vinegar can be added to the mushrooms while cooking for extra depth.
