  • 2 units Shallots (Halve and thinly slice for even cooking.)
  • 2 cups Frozen Peas (Fresh peas can be used, but cooking time will vary.)
  • 1 unit Pear (Can replace with chopped apple if pears are unavailable.)
  • 1 teaspoon Dijon Mustard (Adjust according to taste.)
  • 1 unit Lemon (Zest and juice before adding.)
  • 1/2 teaspoon Black Pepper (Freshly ground is preferred.)
  • 1/4 cup Parsley (Roughly chop for even distribution.)

Instructions

  1. Begin by peeling, slicing, and dicing the pear into small cubes. Place the diced pear in a bowl and drizzle with fresh lemon juice to prevent browning.
  2. Heat a large skillet over medium heat and add the diced pancetta. Cook for about 5–7 minutes until crispy, then remove and drain.
  3. In the same skillet with the pancetta fat, sauté the thinly sliced shallots for about 1 minute until they soften.
  4. Add the frozen peas and diced pear into the pan. Toss and cook for about 5 minutes until heated through.
  5. Remove from heat and stir in half of the reserved crispy pancetta, chopped parsley, and black pepper.
  6. Transfer the peas to a serving bowl, top with the remaining pancetta and a sprinkle of lemon zest.
