Description

This creamy casserole combines fluffy mashed potatoes with sour cream, cheddar cheese, crispy bacon, and green onions for ultimate comfort food perfection.


Ingredients

  • 5 pounds russet potatoes
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 2½ cups shredded sharp cheddar cheese, divided
  • 8 slices bacon, cooked and crumbled
  • ½ cup green onions, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Additional green onions for garnish

Instructions

  1. Peel potatoes and cut into 1-inch cubes.
  2. Put cubed potatoes in a large pot, cover with cold salted water, and bring to a boil.
  3. Cook potatoes for 15 to 20 minutes until soft, then drain all water.
  4. Put drained potatoes back in the pot and mash until fluffy.
  5. Add sour cream, melted butter, and 1 cup cheddar cheese, stirring gently.
  6. Fold in crumbled bacon, chopped green onions, salt, and black pepper.
  7. Move the potato mixture to a greased baking dish and spread evenly.
  8. Sprinkle remaining cheddar cheese over the top.
  9. Bake at 350 degrees for 30 to 35 minutes until the cheese is golden.
  10. Take out of the oven, let rest for 5 minutes, add green onions on top, and serve warm.
