Description

A creamy and spicy potato soup infused with bold Cajun flavors, perfect for a cozy meal.


Ingredients

  • 1 Andouille sausage, sliced
  • 4 Yukon Gold or russet potatoes, diced
  • 2 cups mixed vegetables (carrots, celery, bell peppers)
  • 2 tsp Cajun spices (cayenne pepper, paprika, onion powder)
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced andouille sausage and cook until browned.
  3. Stir in diced potatoes and mixed vegetables, cooking for a few minutes until they start to soften.
  4. Add Cajun spices and stir to coat the veggies.
  5. Pour in enough water or chicken broth to cover the ingredients and bring to a boil.
  6. Reduce the heat and simmer until the potatoes are tender.
  7. Stir in heavy cream and cheddar cheese until melted and well combined.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!
