Delightful Crumbl Pecan Pie Cookies combine chewy cookie goodness with a rich, sweet pecan pie filling.
Ingredients

- 1/2 cup butter (softened)
- 1/3 cup oil (vegetable or canola oil)
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 2 & 1/3 cups flour
- 1/4 tsp salt
- 1 tsp baking powder
- 5 tbsp butter (for the filling)
- 2/3 cup brown sugar
- 1 & 1/4 cups chopped pecans
- 1 tsp vanilla extract
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Set aside.
- Cream the butter, oil, granulated sugar, and powdered sugar in a large mixing bowl or stand mixer until fluffy.
- Add the egg and vanilla extract, mixing until combined.
- Mix in the flour, salt, and baking powder until just combined.
- Using a cookie scoop, portion out 9 cookie balls onto the baking sheet, flattening them to about 1 inch thick.
- Press down the center of each cookie to create an indentation for the filling.
- Bake for 8-9 minutes, then let cool on the baking sheet.
- Melt the 5 tablespoons of butter in a saucepan over medium heat.
- Stir in brown sugar, chopped pecans, heavy cream, the second vanilla, cinnamon, nutmeg, and salt until smooth.
- Spoon the filling into the center of each cookie.
- Return cookies to the oven for an additional 10-12 minutes until golden.
