Description

Delightful Crumbl Pecan Pie Cookies combine chewy cookie goodness with a rich, sweet pecan pie filling.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup oil (vegetable or canola oil)
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for the filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Set aside.
  2. Cream the butter, oil, granulated sugar, and powdered sugar in a large mixing bowl or stand mixer until fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Mix in the flour, salt, and baking powder until just combined.
  5. Using a cookie scoop, portion out 9 cookie balls onto the baking sheet, flattening them to about 1 inch thick.
  6. Press down the center of each cookie to create an indentation for the filling.
  7. Bake for 8-9 minutes, then let cool on the baking sheet.
  8. Melt the 5 tablespoons of butter in a saucepan over medium heat.
  9. Stir in brown sugar, chopped pecans, heavy cream, the second vanilla, cinnamon, nutmeg, and salt until smooth.
  10. Spoon the filling into the center of each cookie.
  11. Return cookies to the oven for an additional 10-12 minutes until golden.
