Ingredients

  • 4 pieces Large Boneless Skinless Chicken Breasts
  • 1/2 cup Ranch Dressing
  • 1/2 cup Italian Dressing
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Black Pepper
  • 1 cup Shredded Parmesan Cheese
  • 2 tablespoons Ranch Dressing
  • 1 cup Italian Style Panko Breadcrumbs
  • 1/4 cup Grated Parmesan Cheese
  • 2 tablespoons Unsalted Butter
  • 1 tablespoon Avocado Oil
  • 4 slices Provolone Cheese
  • 4 slices Mozzarella Slices

Instructions

  1. Begin by cutting your large boneless skinless chicken breasts into fillets or use pre-cut cutlets for ease. Pat dry.
  2. Mix ranch dressing, Italian dressing, garlic powder, onion powder, dried basil, and black pepper in a bowl for the marinade.
  3. Place chicken in a resealable bag, pour the marinade over, seal, and refrigerate for at least 30 minutes.
  4. In a separate bowl, combine shredded Parmesan cheese with extra ranch dressing to create the cheese mixture.
  5. Mix Panko breadcrumbs with grated Parmesan cheese and melted butter in a bowl.
  6. Heat a skillet over medium heat, add avocado oil and one tablespoon of butter, then cook marinated chicken for 5-7 minutes on each side.
  7. Preheat oven to low broil, add provolone and mozzarella cheeses over the cooked chicken, followed by the Parmesan mixture.
  8. Broil for approximately 5 minutes until cheese is melted and bubbly.
  9. Sprinkle breadcrumb topping over chicken and broil again for 4-5 minutes until breading is crispy and golden.
