Ingredients
- 1 cucumber
- 1 teaspoon salt
- 3 tablespoons finely chopped fresh mint
- 1 garlic clove, crushed
- 1 teaspoon caster sugar
- 200ml/7fl oz Greek-style yogurt
Instructions
- Peel the cucumber and cut in half
lengthways. Remove the seeds with
a teaspoon and discard. Slice the
cucumber thinly. Put in a bowl, and
sprinkle with the salt. Toss through,
and leave for at least 15 minutes. - Combine the mint, garlic, sugar
and yogurt in another bowl. - Rinse the cucumber in a sieve
under cold running water to flush
away the salt. - Drain well and combine with the
yogurt mixture. Chill for 15 minutes
and serve.
