ZUCCHINI Broccoli Stir Fry

Ingredients

  • 6 oz skinless, boneless chicken breast,
  • cut into small pieces
  • 2 tbsp soy sauce
  • 2 tbsp apple cider
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 C. broccoli florets, cut into pieces
  • 1 large green bell pepper, cut into squares
  • 1 zucchini, cut into rounds and quartered
  • 3 cloves garlic, minced
  • 1/2 C. chicken broth
  • 1 tbsp vegetable oil
  • 6 green onions, chopped

Instructions

  1. Get a large mixing bowl: Toss in it the chicken, soy sauce, apple cider , and cornstarch.
  2. Place a large pan over medium heat. Heat 1 tbsp of oil in it. Add the broccoli, bell pepper,
    zucchini, and garlic. Cook them for 4 min.
  3. Stir in the broth and put on the lid. Cook them for 7 min. Transfer the mix to a bowl and
    place it aside.
  4. Place a large pan over medium heat. Heat in it the rest of oil. Add the chicken with a pinch
    of salt and pepper for 7 min.
  5. Add the cooked veggies mix. Cook them for 4 min. Serve your stir fry warm.
  6. Enjoy.
