Ingredients

  • 1 tbsp extra virgin olive oil
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 1 C. julienned carrots
  • 1 small onion, chopped
  • 1 C. fresh sliced mushrooms
  • 1 zucchini squash, peeled and cut into 1 inch rounds
  • 2 yellow summer squash, peeled and sliced into 1 inch pieces
  • 1/2 C. pecan halves
  • 1 tsp coarse ground black pepper

Instructions

  1. Place a large pan over medium heat. Grease it with oil. Add the chicken and cook it for 4 min.
  2. Stir in the onion with carrot. Cook them for 4 min. Stir in the mushrooms, zucchini, and squash then cook them for 6 to 8 min.
  3. Season them with some salt and pepper then cook them for 4 min. Serve your stir fry warm.
