  • 1 egg, lightly beaten
  • 2 tablespoons custard powder
  • 2 tablespoons sugar
  • 225ml/8fl oz milk
  • 125ml/4fl oz double cream
  • 2 bananas, sliced into discs


  •  In a heatproof bowl, whisk the
    egg, custard powder, sugar, milk
    and cream until smooth.
  • Put the bowl over a pan of
    simmering water. Stir constantly
    over a low heat for 5 minutes or
    until the custard thickens slightly
    and coats the back of a wooden
    spoon. Remove the bowl from the
    heat and gently stir in the banana.
  • Serve hot
